How you store Kesar mango in the next few days makes all the difference between fruit that ripens perfectly and fruit that goes soft and mushy before you get to enjoy it.

Here is a complete, practical guide to storing Kesar mango after delivery — at every stage of ripeness.


Step 1: Open the Box Immediately on Arrival

As soon as your mango delivery arrives, open the box.

Check every mango for:

  • Bruising or soft spots — these need to be eaten first
  • Any signs of rot — black patches with a fermented smell (contact the seller if this happens)
  • Ripeness level — feel each mango gently; firm ones need more time, slightly soft ones are nearly ready

Remove each mango from its foam netting and lay them in a single layer on a flat surface or tray. Do not stack them on top of each other at this point.


Step 2: Never Refrigerate Unripe Mangoes

This is the most common mistake people make.

If you put a firm, unripe mango in the refrigerator, it will stop ripening. The cold interrupts the natural ripening process and you end up with a mango that never develops its full sweetness or that saffron-orange colour.

Rule: A mango that is firm when you press it gently near the stem is not yet ripe. Keep it at room temperature.


Storing Unripe Kesar Mango (Room Temperature)

Where: A cool, dry spot away from direct sunlight. A kitchen counter or table works well.

Temperature: 20–28°C is ideal. Avoid storing near a gas stove or window with direct sun.

Tips to speed up ripening:

  • Wrap each mango individually in newspaper — the ethylene gas the mango naturally releases gets trapped and speeds ripening
  • Place them in a cardboard box (not plastic) with newspaper padding
  • Do not put them in an airtight plastic bag — mangoes need to breathe

Tips to slow down ripening (if you want to spread out eating):

  • Keep them in the coolest part of your home, away from sunlight
  • Spread them out — mangoes placed close together ripen faster due to shared ethylene gas

What you need:

  • Ripe Kesar mangoes (the riper, the sweeter the pulp)
  • A blender or mixer
  • Airtight freezer-safe containers or zip-lock bags

Steps:

  1. Peel the mangoes and cut the flesh away from the seed
  2. Blend into a smooth pulp — no need to add water or sugar
  3. Taste and adjust — if your mangoes are very sweet, no sugar needed
  4. Pour into airtight containers, leaving 1–2 cm space at the top (pulp expands when frozen)
  5. Label with the date and freeze
